I got a pound of pintos at the grocery store. I soaked them for a a day and a half with very salty water. I washed them carefully this morning. I put them in the crockpot with enough water to cover them and then some. I added a chopped up onion from the food processor and some olive oil. When I returned from work today, the house had the smell of cooking beans.
Some of the beans split because they were cooked at too hot a temperature. A crockpot on low all day will boil the beans. They were very good however.
I made some corn bread and we ate vegetarian tonight. It was a taste combination that I had missed for a long time. The beans were served on top of the cornbread. I also made up some honeybutter. Some of the cornbread was eaten with the honeybutter.
Overall it was a great weeknight meal that took some planning but in the end all it really took was to make up the cornbread. You have to remember to soak the beans overnight in the salt water.
Sue really liked it. She said that it needed a little salt.. can you believe that? She said that it would go great thickened up and served over rice.. There was enough left over for another meal or two.. all on one pound of pintos.
